About this coffee
El Buho ("Owl") is a washed decaffeinated coffee sourced from farmers in Colombia — in the Huila and Tolima regions. The decaffeination process is the sugarcane, or ethyl acetate, method, which preserves the coffee’s natural taste and aroma.
The history of coffee in Colombia
Coffee in Colombia, as in many other countries, was first introduced by missionaries, possibly in the 17th century, shortly after it arrived in the Americas via the Caribbean Sea. Initially, it was grown on a small scale for local consumption and trade. In the 19th century, the priest Francisco Romero, hearing confessions in the town of Salazar de las Palmas, recommended planting coffee as penance for sins. This practice spread quickly, and commercial coffee production developed rapidly in Colombia.
Processing method
The ethyl acetate decaffeination method, also known as the "sugarcane" process, combines high-altitude spring water and naturally derived ethyl acetate (EA), which is found in coffee cherries, fruits, and vegetables. Natural EA is obtained from sugarcane and, together with spring water, is the only element that comes into contact with the coffee.
During the process, the beans are steamed to open their pores, then rinsed several times with ethyl acetate to gently remove caffeine. They are then dried to a moisture level of 10–12% and coated with a natural wax that does not affect the coffee’s taste or aroma.
This process helps preserve the structure of the beans and all their natural qualities, ensuring that every cup of El Buho coffee is just as rich and refined as its caffeinated counterpart.
